Here are some adapted recipes of mine---if you're looking for ways to use some of our products. (More to come later)
  • Egg, Sausage, and Tomato Strata

6 slices bread, toasted and cut into small 1 inch squares
1 lb. bulk beef sausage, browned
1 1/2 cups shredded cheese (I use Fiesta Blend)
6 or 7 eggs, beaten
1 1/2 cups whole milk
2 or 3 diced shallots quickly sauteed in butter
1 cup coarsely chopped Roma tomatoes (squeeze some of the seeds/liquid out first)
several sprigs basil and parsley, coarsely chopped
salt and pepper to taste

Lay toasted cubed bread in buttered 9 by 13 pan (preferably glass).  Top with browned sausage and shallots (or onion), then top with cheese and tomatoe.  Mix the eggs and milk together, pour carefully over the bread mixture.  Top with herbs, salt and pepper.  (Adjust with more eggs/milk if necessary, to make sure bread is covered.)
Bake in preheated 325 degree oven for 45 min. to an hour.  Cool slightly then serve.  Great for lunch and dinner, too!
